Pumpkin Protein Pancakes

Since I have so much pumpkin puree left I thought it would be a great idea to make protein pancakes out of it. 

  
It was one of my best ideas I’ve had lately πŸ™ŒπŸ½ They’re so fluffy and don’t need any dairy, flour or sugar..apart from the topping 😁 

Ingredients:

  • 25gr Oats 
  • 25gr Ground almonds
  • 1 tbsp Desiccated coconut
  • 1 scoop vanilla flavored protein powder
  • 1 egg white
  • 2-3 tbsp Pumpkin purΓ©e
  • 1 tbsp chia seeds
  • 80ml Alpro coconut drink
  • 1 tspn ground cinnamon
  • Pinch of salt
  • 1/2 tspn baking soda

  

Method:

I basically chucked all the ingredients together in my Nutribullet and blended for a few seconds. The same can be done in a normal foo processor. I poured a scoop of the batter on a non-stick pancake pan for 3 minutes on each side. You want the bottom to be firm before you flip the pancakes otherwise they’ll become scrambled pancakes ☺️

I topped mine with a few pecan nuts, crunchy peanut butter(a must!) and agave nectar.

This recipe makes 2 pancakes- great amount for one!

I made these yesterday 

 
And had to make another batch this morning 😍 because what goes better with London’s rainy mornings than an ordinary cup of teaβ˜•οΈ
